Quinoa Breakfast Pudding

I had some left-over quinoa after making these delicious Roasted Buddha Bowls for dinner last night, so I decided to turn it into a sweet breakfast dish, sort of like a rice pudding. It was really tasty, not to mention healthy, super quick, and easy to make! Here’s what I did:

QUINOA BREAKFAST PUDDING

Ingredients:
1 cup quinoa (already cooked)
1 cup homemade almond milk
1/4 cup raisins
2 Tbsp maple syrup
1/2 tsp cinnamon
2 Tbsp chia seeds

Instructions:
I simply tossed all of the above ingredients–except for the chia seeds–into a pot and brought them to a boil, stirring frequently, for about 5-10 minutes. I kept thinking that my concoction would eventually congeal and get “puddingy,” but it never did. So I decided to pull it from the heat and stir in 2 Tbsp of chia seeds, then let it sit for a few minutes to soak up the extra liquid. This worked perfectly, and the chia seeds were nutritionally beneficial, as well–hooray!
