Lentil Soup

Here’s another quick and easy recipe for a healthy, inexpensive, and satisfying meal.



1 cup lentils
1-2 cups carrots (grated)
2 stalks celery (sliced)
6 cloves garlic (minced)
2 Tbsp olive oil
1 28-oz can whole plum tomatoes (diced)
1/2 tsp cumin
1 tsp coriander
3 Tbsp apple cider vinegar
2-4 strips kombu (sea vegetable)
2-3 Tbsp miso (we used brown rice miso)
6-8 cups water
sea salt (to taste)
black pepper (to taste)

Combine all of the above in a large pot, bring ingredients to a boil, reduce heat, cover, and simmer until lentils are tender (approximately 30-45 minutes).
