Quinoa & Black Bean Soft Tacos

For some reason, last night’s dinner was really heavy on legumes, especially for Zander, who wasn’t interested in his green peas, but gobbled up five (yes, 5!) servings of lima beans.

Our main dish was a Quinoa & Black Bean Soft Taco, inspired by our recent lunch at Nashville’s first vegan restaurant, The Wild Cow. We included the following ingredients:

– whole wheat tortillas
– quinoa
– black beans
– vegan “chicken” strips sauteed in grapeseed oil with garlic, salt, and pepper
– homemade guacamole
– diced roma tomatoes
– vegan sour cream
– salsa

Easy peasy! (pardon the pun)
