Today was a great day! It began with a weekly play group at our local Family Resource Center, which Zander and I both love. After that, we got in a good, brisk 90-minute walk, first distributing flyers around town for the upcoming children’s toy and clothing swap, and then picking up a few items at the grocery store. We really enjoyed the fresh air, and Zander had a nice little nap, too.
When we got home from our walk, it was time to make lunch. We opted for a quick and easy favorite, vegan mac ‘n cheese with broccoli. For the “cheese” part, we like to use Leahey Garden’s Cheese Flavored Sauce Mix plus a little extra nutritional yeast for added vitamin B12.
I would include a recipe for this concoction, but we really just wing it each time, combining whatever pasta we have on hand with the Leahey’s sauce (powder + water, stirred over heat until thickened) and heaps of cooked broccoli, then adding a little vegan margarine (I use Earth Balance), salt and pepper, and nutritional yeast to taste. Zander loves to help me add ingredients and stir, and he is getting better and better at it the more we practice.
After lunch, Zander normally goes down for a nap. But today, his sleep schedule was thrown out of balance due to the unplanned morning nap, so we decided to make some snowman ornaments for his grandparents instead. First, we gathered all of the materials: pom poms, foam squares, jingle bells, googly eyes, a red pipe cleaner, and a hot glue gun.
Then we had an extremely careful assembly session, with me doing all of the hot-glue-gunning and Zander doing all of the “smooshing” together of the various parts once I had applied the glue. He also really enjoyed playing with the cold glue sticks in between smooshing sessions.
